Cashew Cream

Soak the cashews overnight or at least for a couple of hours.

Yields

1 cup

Ingredients

1 cup raw cashews

1 tsp. vanilla extract

1 cup filtered water

Directions

Soak your raw cashews overnight or for at least two hours.

Drain the water you used to soak the cashews off.

Put cashews, vanilla, and 1 cup of filtered water into your blender.  ( I use a Blendtec, but I'm sure others will work just as well.)

Mix for 30 seconds.

Enjoy!

Notes

Cashew cream is great for morning coffee ( I make lattes out of mine.  Recipe to follow), a topping for berries, ice cream, etc.  You can also use it as a sauce for fettucine alfredo if you make it savory (Recipe to follow).

The sky is the limit with this stuff.  I use it all the time!
